"Absolute" may mean something without limit, condition, dependency, and even relation, property, attribute, and so on.
I tend to consider it as the expression of our desire for the unconditional certainty, that we feel no doubt about anything in any way. It is a metaphor for the permanent peace of mind, most probably.
It can only be approached by negation because attributing any property, attaching any assertion of positive nature, would limit it, and it would contradict with the notion of absoluteness.
